I am about to move DNS management to deSEC from another provider.
Configuring the TXT record I find surprisingly hard. Enter hostname + target keys.
Any idea on how to configure this from the interface? See screenshot.

Thanks for your message, and welcome to deSEC! 
Based on the documentation you linked, my understanding is that the hostname goes into the “Subname” field, and the target into “Content”. (The latter field requires surrounding quotes, but the GUI will tell you.)
None of this has to do with “keys”; this is not general terminology, and specific to mailbox.org.
